Yesterday afternoon about 1:30 - I realized I hadn't thought about supper yet. I didn't have any meat thawed out ... what was I going to do?
Luckily I had several Homemade Gourmet meals in my freezer. So I went to look to see what I had that we could eat, and Chicken Enchilada Marinated Chicken won! I took it out of my deep freeze at about 1:30ish and ran hot water over the bag long enough to losen it. Then I just dumped it all in the crock pot. I put it on the low 8 hour setting ... and by 5:30 when Cameron got home it was ready. I made some instant rice and corn to go with it. And we had some fresh carrots and broccoli!
I LOVE my frozen Homemade Gourmet meals! Often, I will go to the store and buy a bunch of meat when it's on sale, then come home and put together 4 or 5 meals in freezer bags, then just throw them in my freezer. Then, on days like yesterday when I forget about supper - or don't have time to spend in the kitchen, I just grab one and throw it in the crock pot. Another good thing about these frozen meals is that if I wanted, I could thaw one out during the day, then throw it in the oven for about an hour before Cameron gets home!
I've had several J.A.M's where we make some of these meals - then you go home and Just Add Meat. I'm having another one on September 29. It's the last Tuesday of the month, at 7 at my house! Let me know if you are intersted!
